Hello pizza man joe, as a fellow pizza lover myself, I have tasted endless amount of cheese, sauces and doughs , some better then others. So I ask you what do you look for in a perfect pie? Is it the cup and char pep, or the stretch of the cheese? If not that it must be the dough right?
